Pork Souvlaki Skewers with Tzatziki

Before we get cooking, here’s everything you need. Check items off as you go — at home or in the store.

Directions

  • In a bowl combine garlic, olive oil, white wine, lemon juice, oregano, paprika, salt, and pepper. Add diced pork loin and onions, toss until well coated. Cover and refrigerate for a minimum of 30 minutes or up to overnight.
  • Drain pork and onions from marinade. Discard remaining marinade. Skewer pork, alternating with 2-3 slices of red onion, equally dividing between 4 skewers.
  • Preheat grill to 400-450°F. Grill skewers until pork reaches an internal temperature of 145°F, about 3-5 minutes per side.
  • Allow pork to rest 5-10 minutes before serving. Serve skewers with pita, tzatziki, and shredded romaine if desired.

Whole muscle pork cuts are safe to eat when cooked to 145 degrees and allowed to rest for 3 minutes.
