Ingredients

Directions
- In a large skillet over medium high heat add oil. Once hot, add pork and cook, breaking up into small pieces, until pork is no longer pink and reaches a temperature of 160°F. Add onions and cook until softened, about 2-3 minutes.
- Add rice, peas and carrots, soy sauce, oyster sauce, and sesame oil and stir to combine. Cook, stirring occasionally, for 3-5 minutes until rice and vegetables are warmed through.
- Push rice mixture to one side of the skillet. Crack eggs into the cleared-out side of the pan and scramble to cook through before mixing into the fried rice. Once all ingredients are fully incorporated remove from heat.
- Serve hot garnished with scallions if desired.
*Ground pork is safe to eat when cooked to 160 degrees.
