Directions

PREPARATION​

  • Preheat oven to 300°F.
  • Rub pork shoulder with olive oil and all seasonings.
  • Place in a covered Dutch oven or tightly wrapped roasting pan.
  • Roast 3–4 hours, until fork-tender. ​ USDA Safe Temp: Cook pork to 145°F, then rest 3 minutes. ​ (For shredding, internal temp typically reaches 195–205°F.)
  • Rest 15 minutes, then shred with forks.
  • Toss lightly with pan juices or BBQ sauce if desired.

Assembly

  • Spread tortilla chips across a large board or platter.
  • Pile pulled pork in the center.
  • Add bowls of cheese, guacamole, sour cream, and pico.
  • Scatter jalapeños, pickled onions, and cilantro around the board.
  • Finish with lime wedges for brightness.
