Directions

  • Preheat grill to 375–400°F.​
  • Slice onions into ½-inch rings and pair a large ring with a smaller one to create a gap for filling, creating a "donut".​
  • In a bowl, gently mix ground pork with Worcestershire, mustard, garlic powder, smoked paprika, onion powder, salt, pepper, and chili flakes if desired.
  • Press pork mixture into the space between onion rings in a thin, even layer (about ¼ inch).​
  • Wrap each ring with bacon, slightly overlapping to fully cover. Lightly season the outside with desired seasoning.​
  • Chill for 20–30 minutes to set shape. Meanwhile, mix all sauce ingredients until smooth and set aside.​
  • Cook rings over indirect heat for 30–45 minutes, flipping halfway, until bacon is crisp and ground pork reaches an internal temperature of 160°F.​
  • If needed, finish under broiler for 2–3 minutes to crisp bacon. Rest 3–5 minutes, then serve with dipping sauce (optional). ​

For Air Fryer

  • For air fryer, cook at 375°F for 14–18 minutes, flipping halfway, until ground pork reaches an internal temperature of 160°F.​
