Ingredients

Before we get cooking, here’s everything you need. Check items off as you go — at home or in the store.

Directions

  • In a skillet over medium high heat cook ground pork, breaking up, until cooked through, about 5-7 minutes.
  • Add taco seasoning and water. Stir to combine and bring mixture to a simmer for 2-3 minutes until thickened. Remove from heat and cool.
  • Stir in hatch chiles and cheese until well mixed.
  • Wrap tortillas in a damp paper towel and microwave for 30 second to make tortillas more malleable. Evenly portion filling across tortillas, about 2-3 tablespoons each. Tightly wrap tortillas and secure with a toothpick.
  • Preheat air fryer to 400°F for 2-3 minutes.
  • Spray wrapped tortillas with cooking spray. Air fry in 2-3 batches until crisp, about 5-7 minutes. Cool 5 minutes before serving. *
  • Serve with salsa and sour cream as desired.

*Could also be baked in a preheated 400°F oven until crisp, about 10-15 minutes.
*Could also be pan fried until crisp.

NOTE: good quality corn tortillas are necessary in this recipe to ensure they are able to wrap up and not crack. This recipe can also be made with flour tortillas (would be called flautas). These can also be frozen after being wrapped and cooked directly from the freezer by adding 3-4 minutes to cook time for any of the above methods.

*Ground pork is safe to eat when cooked to 160 degrees.
