Ingredients

Before we get cooking, here’s everything you need. Check items off as you go — at home or in the store.

Directions

  • In a bowl, combine al pastor seasoning packet with lime juice and vegetable oil. Add pork and pineapple; toss until well coated. Cover and refrigerate to marinate for a minimum of 30 minutes or up to overnight.
  • In another bowl, combine onion and cilantro; toss to mix. Refrigerate until needed. Preheat grill to 400–450°F.
  • Thread pork and pineapple onto soaked skewers. Grill until pork reaches an internal temperature of 145°F, about 5–6 minutes per side.
  • Remove from grill and rest 5–10 minutes. Remove from skewers and roughly chop pork and pineapple together.
  • Warm tortillas on the grill or over an open flame until soft and lightly charred.
  • To serve, divide pork and pineapple mixture evenly among tortillas. Top with onion mixture and avocado, if using. Serve with lime wedges, if desired.

*Whole muscle pork cuts are safe to eat when cooked to 145°F and allowed to rest for 3 minutes.
