Ingredients
Before we get cooking, here’s everything you need. Check items off as you go — at home or in the store.

- In a bowl, combine ground pork, grated onion, minced garlic, breadcrumbs, parsley, paprika, cayenne if using, baking soda, salt, and pepper. Mix well until all ingredients are evenly distributed. Cover bowl and refrigerate to rest for 1-2 hours allowing flavors to meld.
- Divide meat into 12 portions and roll each into an oval that is roughly 3-4 inches long and 1 inch thick.
- Heat grill to 400°F. Grill čevapčići on all sides until well-marked and sausages reach an internal temperature of 145°F. Serve hot alongside desired accompaniments.
NOTE: The baking soda in this recipe helps to keep the meat tender. It gives the sausages a slightly spongey texture which is traditional.
*Ground pork is safe to eat when cooked to 160 degrees.
