Directions
PREPARATION
- Preheat oven to 300°F.
- Rub pork shoulder with olive oil and all seasonings.
- Place in a covered Dutch oven or tightly wrapped roasting pan.
- Roast 3–4 hours, until fork-tender. USDA Safe Temp: Cook pork to 145°F, then rest 3 minutes. (For shredding, internal temp typically reaches 195–205°F.)
- Rest 15 minutes, then shred with forks.
- Toss lightly with pan juices or BBQ sauce if desired.
Assembly
- Spread tortilla chips across a large board or platter.
- Pile pulled pork in the center.
- Add bowls of cheese, guacamole, sour cream, and pico.
- Scatter jalapeños, pickled onions, and cilantro around the board.
- Finish with lime wedges for brightness.
