  • In a large bowl, whisk together grated pear, soy sauce, brown sugar, sesame oil, gochujang, garlic and ginger. Add pork and toss until well coated. Allow to marinate for a minimum of 2 hours or overnight.
  • In a skillet, heat 1 tbsp of oil over high heat. Add one quarter of the pork and sear on both sides, being sure not to overcrowd the pan. Work in batches, repeating with remaining pork, until all is cooked to 145° F, followed by a 3-minute rest.
  • To serve, place 2 tbsp of cooked rice in a lettuce cup and top with 1-2 oz of cooked pork. Garnish with scallions and sesame seeds.
