Ingredients

Directions
Prep the Pork:
- If needed, pound the pork slices between plastic wrap to 1/4-inch thickness for even cooking. Season both sides of each piece with salt and pepper.
Breading Setup: In three shallow bowls:
- Bowl 1: flour
- Bowl 2: beaten eggs
- Bowl 3: breadcrumbs + paprika + garlic powder + cayenne
- Dredge each pork piece in flour, dip in egg, then coat thoroughly in breadcrumb mixture.
Cook the Schnitzel:
- In a large skillet, heat 1/4 inch of vegetable oil over medium-high heat.
- Fry the schnitzels in batches, 2–3 minutes per side, until golden brown and internal temperature reaches 145°F.
- Transfer to a paper towel-lined plate and rest 3 minutes.
Toast the Buns (optional):
- Lightly butter and toast the slider buns in a skillet or oven until golden.
Assemble the Sliders:
- Spread mayo and/or mustard on buns. Layer with lettuce, tomato/pickle, and pork schnitzel.
- Optional: squeeze fresh lemon juice on the pork before topping with the bun.
Whole muscle pork cuts are safe to eat when cooked to 145 degrees and allowed to rest for 3 minutes
