Ingredients
Before we get cooking, here’s everything you need. Check items off as you go — at home or in the store.
Directions
- Cut pork shoulder into long pieces that are roughly 2 inches wide. Use a fork to poke holes all over pork to help marinate.
- In a bowl combine brown sugar, soy sauce, oyster sauce, hoisin sauce, Shaoxing wine, and five spice. Whisk until sugar is dissolved.
- Place pork into gallon resealable bag. Pour marinade over pork and massage into meat. Marinate for a minimum of 2 hours or up to overnight (overnight is preferred).
- Preheat grill to 400-450°F.
- Remove pork from resealable bag, removing as much marinade as possible. Reserve remaining marinade to use for basting while pork is cooking. Red food dye can be added to marinade at this point if using.
- Place pork on hot grill and brush with reserved marinade. Turning every 2-3 minutes, continuing to brush with marinade on all sides, until well caramelized. Reduce heat to 300°F and continue to grill, basting and turning meat every few minutes to prevent burning, until pork reaches an internal temperature of 145-160°F. Allow pork to rest for 3-10 minutes before slicing.
- Char siu pork can be used in sandwiches, soups, stir fries, fried rice, noodle dishes, and more! Char Sui Pork can be used in a variety of recipes or served simply with white rice and grilled bok choy.
